Easy healthy breakfast

My doctor said I should never ever skip breakfast.  She convinces me that having a regular breakfast will change my life significantly in a long run.  Although I never complaint about my instant oatmeal or cereal routine, I kinda want to cut my sugar intake whenever I can and substitute them with something more healthier.  For months, I’ve been looking for a good, nyummy, quick and easy breakfast menu.  But then, I realize that if I want to have something exceptional, I should spend more time to prepare it so might as well make it the night before.

This recipe takes more effort and time that I initially wanted, but I guess if I make it in large batches on weekend, I’ll get 2 – 3 of healthy breakie meals. This’ll do for the time being.

This is how I do it.

Shreds a whole wheat bread, put in on to the bottom of the pan Stir onion and garlic with green and tuna (or chicken or meat or mushrooms) and spread it on top of the bread add cherry tomato, cheese and cooked spinach, Pour a mix of milk, eggs, salt, pepper and other seasons (my fav is oregano and rosemary) Baked for 20 minutes
