Easy healthy salmon cake

Last night my husband told me that he felt like our current live now are revolved around food as he felt “what’s for dinner?” is one of our frequent questions in the house.  It’s true though, when the clock hits 12 sharp, I would start browsing and thinking what to cook (and shop) for dinner.  We both like healthy and tasty foods.  One of the challenges is that we would typically miss some ingredients during our groceries shopping and end up improvising stuff.  However, despite some err here and there, we never get to a point where we would have to throw any food (big NO).

So, our latest experiment is this salmon cake.  I wanted to eat a simple pan fried salmon, but my husband didn’t really like it to eat salmon as it is.  He then came up with the idea of making a salmon cake, and this is how we do it.

Ingredients

100 gr – raw salmon: pan fried with butter for 5 minutes and then shred

5 – 6 mini carrot sticks: grated

3 red chili peppers: chopped (we like things to be spicy)

2 – 3 garlic: smashed

1/4 onion: dice into small pieces

2 big eggs

3 whole wheat breads: toast, break them apart into crumbs (I think you can use bread crumbs instead, but we don’t have it, so this’ll do) – 1 part goes with the rest of the ingredients,  another part for coating before the dough is fried.

Salt and pepper to taste

Direction

Combine all ingredients together.

I would suggest adding the egg at the very last stage, one by one to see whether the consistency is good enough, you want to have something that look like a cookie dough, not too watery.

Once its done, divide the dough into small parts, coat it with the whole wheat breads crumbs, and fried them in hot oil until it turns golden brown.

Serve for 2.

Taste pretty good! Next time, I’d probably add some cheese and scallion into the mixture.
