Trying out vegetarian dinner

Last night I texted Aldy and asked what did he want for dinner and he simply replied “some veggies”.  Okay, challenged accepted! I saw this recipe for sweet potatoes toast and really want to give it a try.  Since I really don’t know what to expect from this dish, I decided to prepare a toast bar so Aldy and I can have different options.

The preparation is quite easy:

1 large sweet potato, baked (I used a bread toaster)

1 small carrot, grate

1 tomato, chopped

Cheese

Avocado sauce: 1 avocado, 2 tbs plain yogurt, chopped cilantro, honey to taste and little bit orange juice, blend all together).

Then, I also prepare a green salad mix as a side dish (my salad dressing usually only consist of olive oil, lemon juice, cheese and little bit of honey).

Optional (non-vegan): you can also add protein like eggs (scramble or sunny side up) or stir-up some mushroom with caramelized onion.

To be honest, this kind of dish is a bit too ambitious and too healthy for Aldy and I.  This is not our everyday food and we certainly love meats.  However, at the end of the meal, we agree that we don’t mind having this meal again next time.  So, I guess this score around 6.8 out of 10.
